I grow hardneck varieties of garlic, which are well suited to the UK climate. All my garlic is sown and picked by hand. Garlic bulbs are hung up to dry naturally and then sold loose and in tied bunches, which are not only the most delicious garlic, but are also a pretty addition to any kitchen.

Garlic Varieties
I grow three different varieties of garlic:
- Carcassonne Garlic
Carcassonne Garlic has a robust flavour and a superior bouquet. I use this garlic a lot in my cooking, believe me, once you have tried this, you will never buy cheap imported garlic ever again! Carcassonne Wight originates from the South of France. - Caulk Wight Garlic
Caulk Wight Garlic has a strong flavour and is slightly spicy. It originates from Eastern Europe and Russia. The cloves are large and easy to peal and the bulbs have a distinct purple striping. Eaten raw and sliced with Pancetta, it is reported to be the best garlic you will ever taste. - Kingsland Wight Garlic
Kingsland Wight Garlic is favoured by French chefs for its intense flavour and aromatic character. It can be traced back to the Mongol traders in Kazakhstan. It has large purple cloves and stores well.

Tied Garlic Bunches
As you can see from the above descriptions of the varieties, these are superior types of garlic, that really don’t compare to the cheap imports from China and Spain wrapped in netting that we are mainly used to. Although not certified organic, I do use organic methods to grow my garlic crop.
Garlic Scapes
Garlic scapes are available around the beginning of June. They have a mild garlic flavour and are crisp and tender. They look a but like large chives. Garlic scapes can be chopped raw into salads, sauteed and served as a side dish, or added to any recipe in the place of garlic. They are a bit of a delicacy and enquiries are welcomed from local restaurants.
All my garlic is produced using organic farming methods. I do not use any pesticides or herbicides, or any chemicals at all. Planting and harvesting is all done by hand.
